Sourdough Love Letter Pastries

Sourdough Love Letter Pastries
Ingredients
For the pastry dough
- 1 cup flour
- 1 tbsp sugar I use Florida Crystals Organic Cane Sugar
- 1/2 cup cold salted butter (cubed)
- 1/2 cup sourdough starter (active or discard)
- 1 tsp apple cider vinegar
You'll also need
- 1/2 cup raspberry jam
- heavy cream for brushing
- powdered sugar for dusting
Instructions
- Mix dry ingredients, then add in cold butter until crumbly
- Add sourdough starter and acv until dough forms. Wrap and chill for at least 2 hours or overnight
- Roll out dough and cut into 4×4” squares + mini hearts
- Arrange squares in a diamond shape on a parchment paper lined baking sheet. With a fork poke holes in the center of dough
- Fill with jam, fold into an envelope shape. Then place a splash of cream and seal with a heart. Brush with egg wash.
- Bake at 350F for about 30 min until golden. Let cool, then dust with powdered sugar
