Ingredients
For the pastry dough

cup
flour
1
tbsp
sugar
I use Florida Crystals Organic Cane Sugar
1/2
cup
cold salted butter (cubed)
1/2
cup
sourdough starter (active or discard)
1
tsp
apple cider vinegar
You'll also need
1/2
cup
raspberry jam
heavy cream
for brushing
powdered sugar
for dusting
Instructions
Mix dry ingredients, then add in cold butter until crumbly
Add sourdough starter and acv until dough forms. Wrap and chill for at least 2 hours or overnight
Roll out dough and cut into 4x4” squares + mini hearts
Arrange squares in a diamond shape on a parchment paper lined baking sheet. With a fork poke holes in the center of dough
Fill with jam, fold into an envelope shape. Then place a splash of cream and seal with a heart. Brush with egg wash.
Bake at 350F for about 30 min until golden. Let cool, then dust with powdered sugar
