The Best Sourdough Bagel Breakfast Sandwich
Now that I’ve been making my own sourdough bagels at home, breakfast sandwiches have become one of my favorite ways to use them. The bagels have that perfect chewy texture with a slight tang from the sourdough fermentation, and they’re sturdy enough to hold all the fillings without falling apart.
If you want to make the bagels from scratch, I shared my full sourdough bagel recipe in a separate post.
For these breakfast sandwiches, I keep it pretty simple. I spread a layer of cream cheese on a toasted sourdough bagel, then add crispy bacon, a fried egg, sliced avocado, and a handful of arugula. The creaminess from the avocado and cream cheese pairs so well with the savory bacon and egg, and the arugula adds a fresh peppery bite.
They’re also great for meal prep. You can assemble the sandwiches ahead of time with the bagel, egg, bacon, and cream cheese, and keep them in the fridge. When you’re ready to eat, just warm them up and add fresh avocado before serving.

The Benefits of These Simple Ingredients
Sourdough bagel breakfast sandwiches aren’t just delicious; they’re also made with ingredients that bring some great nutritional benefits. Sourdough bagels are naturally fermented, which can help improve digestibility and support gut health compared to conventional breads. Eggs provide high-quality protein along with important nutrients like choline and B vitamins that support brain and metabolic health. Avocado adds a creamy texture and heart-healthy monounsaturated fats, fiber, and potassium, which help keep you full and satisfied. Bacon brings a savory, satisfying flavor and protein, while arugula adds a fresh peppery bite along with antioxidants, vitamins A and K, and beneficial plant compounds. Altogether, these ingredients create a balanced breakfast that includes protein, healthy fats, and complex carbohydrates to help keep your energy steady throughout the morning.

Ways to Customize This Breakfast Sandwich
One of the best things about breakfast sandwiches is how easy they are to customize. You can swap the bacon for sausage or turkey bacon, add a slice of cheddar or pepper jack cheese, or use scrambled eggs instead of fried. Even adding tomato or microgreens can give it a slightly different flavor.

What to Serve with These Breakfast Sandwiches
I love pairing this sandwich with a homemade matcha or coffee latte and some fresh fruit for a really balanced breakfast. Berries, sliced oranges, or kiwi are all great alongside it. If you want something a little more filling, crispy breakfast potatoes or roasted sweet potatoes would also be really good!
