Sourdough Bagel Breakfast Sandwich
A simple breakfast sandwich made with a toasted sourdough bagel, cream cheese, crispy bacon, a fried egg, avocado, and fresh arugula

Ingredients
1
sourdough bagel
sliced and toasted
1
tbsp
cream cheese
I love Nancy's Organic Probiotic Cream Cheese
2
slices
uncured bacon
or turkey bacon
1
large egg
ΒΌ
avocado
sliced
Handful of arugula
Butter or oil
for cooking egg
Instructions
In a skillet over medium heat, cook the bacon until crispy. Transfer to a plate lined with paper towels.
In the same skillet, add a small amount of butter or oil and fry the egg to your preferred doneness.
Slice and toast the sourdough bagel until lightly golden.
Spread cream cheese on the toasted bagel halves. Layer with bacon, the fried egg, sliced avocado, and a handful of arugula.
Close the sandwich and enjoy warm.
Notes
These sandwiches can be prepped ahead of time. Assemble with the bagel, bacon, egg, and cream cheese, then add avocado after reheating.
Try adding cheddar or pepper jack cheese for extra flavor.
Use scrambled eggs instead of fried if you prefer.
