Instructions
Add egg whites, cottage cheese, oats, coconut sugar, vanilla, cinnamon, baking powder, and salt to a blender. Blend until smooth. Let the batter rest for 5 minutes.
In a small saucepan, combine diced apple, water, cinnamon, and salt. Simmer 5–7 minutes until soft.
Heat a skillet over medium and add butter. Pour batter into pancakes. Cook until bubbles form, flip, and cook until golden and cooked through.
Top with stewed apples, Greek yogurt, maple syrup, bee pollen, flaky salt, and more cinnamon.
